Hiakai winner at the Innovation Awards
Hiakai creates pop-up dining experiences that both educate and hero Māori cuisine and cooking techniques. Hiakai means to be hungry or having a craving for food.
Hiakai explores Māori ingredients, cooking techniques and traditional food combinations in new pop-up modern dining experiences. Hiakai hosts intimate Māori dining experiences that allow guests to learn about the processes involved in Māori cooking techniques, and to learn more about the adaptive nature of Māori crop–growing and cuisine. Hiakai hopes to encourage an interest in Māori cuisine and to generate a revival amongst young Māori chefs to utilise their cultural heritage in cooking.
